I finally got my replacement temp controller today, after a 6 month wait, i will post as soon as I install it and verify the temps. Hope this (new design) and new logic will solve the issues with temps being all over the place.

To get better draft on the chip tray, I do the following:
Load the chip loader only 1/2 full, then when dumping the chips leave the chip loader in the dumped position, don't turn it back after dumping the chips. If you look closely you will see the 3 holes in the chip loader and the 3 holes...
For me 275 was the death of the ribs, I never,ever go more than 235 and I pre heat the following way.
1. Have meat prepared ready to go.
2. Turn on MES and set to 235F ( do not add chips at this time)
3. Watch the read-out when it hits 160-170 open the door

When I smoke wings in my MES 30 gen2 all I do is set it for 235 and smoke for 1 1/2 hours, anything more and they dry out.
Last batch I did for the wife was 10 LBS of wings with apple wood.
here is a trick I used before I got the cold smoker attachment,
When loading the chips, rotate the chip loader to dump the chips, then leave in that position, don't rotate it back. This seems to make the correct draft for the chip tray. Try it it works!
I have the cold smoker attachment, works great! I too got tired of loading the chip tray every 15-20 minutes. The cold smoker, load it with the wood chips,turn it on and walk away smoke lasts for at least 5 hours ( and I did'nt fully load it about 3/4 full). Personally I think it works great...
I have the MES 30 from Lowe's and I love it, the only drawback I see is the constant loading of chips, so I bought the cold smoke attachment, going to attach it tomorrow and see how it does. I have talked with the people at masterbuilt, and they tell me that there is a new controller coming out...

1. Temperature controllers are always way out of calibration, some read low, some read high.

Masterbuilt called me a couple of days ago and said new updated temperature controllers are still on back order, they did offer me a "cold smoker" attachment for a discounted price, since I have been waiting for the updated controller.
I've had mine for a couple of months MES 30 from Lowe's ( GEN2) works ok, temps are WAY off on the cooler side set it for 260 and pray you get 230, MB sending new parts to correct issue.
