    Need help for buying a new smoker - Need to act fast

    I went thru the same thing , had a ecb (4weeks) and wanted to upgrade. Ended up with an Akorn Kamado . Wanted to start grilling etc. this unit gives me some choices. The other option was a WSM. The Akorn was on sale first.

    Water/no water ?

    Newbie - been reading up on water vs no water ? Is it easier using something as a heat sink to dial in the heat? Especially when it gets cooler? Flower pot plate, alumni pan, lava rock or a simple interlocking patio paver? Which seems to be better for a newbie? Don't mind adjusting the vents...

    Yes used water - funny yesterday same temp,outside but less wind and a pork butt cooking at 170

    Didn't turn out too bad. Was quite windy and 16c/60f. Had a wind break set up for the ecb. Couldn't get it pas 240. My guess is too stuffed with charcoal ? Anyway here are some pics
