    In the masterbuilt electric smoker, the heat box is about 5" x 8" in a 14" x 20" smoker........I think (feel IMHO) that the water pan helps distribute the heat all across the bottom of the smoker.......call the water pan a diffuser. Even with the pan, the meat right over the smoke box...

    I did up a batch of Buffalo jerky a couple weeks ago and used a light cure on it overnight. Turned out wayyyyyyy too salty, so time to try a second batch a bit different.

    I like the sounds of your marinade, can you share times and temps with us? I've got 10 pounds of thin sliced buffalo that is going to be run through the MES smoker today after a 24 hour marinade in Yoshidas teryaki sauce. See my post on it soon.........

    I was also going to comment on all the fat in that jerky meat. No harm in cutting it up into smaller pieces and taking out the fat. I also have found recently how well Buffalo turns out for jerky, very lean like venison. I doubt if I'll do another "Beef" batch again after trying and using...

    who cares about the rain, we get that all the time in seattle. BUT, geezus, we just got hit with 4-5 inches of snow last night, and it's friggin, mid-late april!!!!!!!!!!!! crap, I put out about 20 pounds of grass seed 2 weeks ago when it was in the low 60's......... There goes $50 of seeds...

Actually, we have ate llama meat before, and it is quite like Buffalo, very lean, we just called it venison when it was on the table. No it wasn't...

    Just bought two more buffalo roast, sliced them up on my 12" weston meat slicer for jerky. Curing the meat right now, going to do Jeffs Rib Rub on them and smoke 'em up tomorrow..........stay tuned for more buffalo jerky cue view......

    Buffalo is a great meat to eat, so much leaner and a bit more flavor than beef. Not tough if you do it right, gotta be careful as it doesn't have the fat to use as a safety cushy. Sooooo, here is my latest ~3-4 pound roast, buffalo with Jeffs Naked Rib rub on it, I love this spice rub, everyone...

    heh heh. Tool time all the way, why stop at the 3/8" drive makita, I'll have to pull out the 1/2" hammer drill for those big recipes........ I've tried/used a coffee mill, but unless you pulse the trigger really slow and careful, you can wind up with powder, not crushed corns. Guess it comes...

    I've done this conversion to a brinkman barrel smoker before, you'll notice that the propane heat has alot more moisture in it........I didn't use the water pan after converting to gas.
