    I went looking for some maple extract, but couldnt find it anywhere - 3 stores were out of it. Ended up with some pure maple syrup and was planning on adding a cup or so. Just curious if it was even worth the effort.

    Got a maverick that I'm using (learned that lesson a long time ago). I plan on pan searing the filets in a cast iron skillet when they're done. Will 130 IT put em about medium rare/medium?

    Going out on a limb and trying something different today. Bacon wrapped filets and some green beans with bacon, sautéed onions, garlic and mushrooms. Throwing it all in the smoker with some Jack Daniels oak wood chips. Figuring an hour or so at 225. Sound about right?
