    ddrain, I have a quick question about one of the ingredients the recipe calls for. The recipe call for 1 gram of Red peppers, ground. Is that the dried hot red pepper that you put on pizza? Thanks

    Dr. K, that's exactly what I did when I rewired mine. I used a dremel to make a access panel to the snap disk and used the existing wiring between the snap disk and the element. I also used the existing wiring between the heater element and the bottom panel. Pics of the mods can be found here...

    Brisket looks good to me. Do you have a Restaurant Depot anywhere near you? They have whole packer briskets. If you do and you don't have a tax ID number you can join the KCBS and get a day pass every time you go.

    Since I did this mod I've had about a dozen cooks. I've smoked bacon, sausages and jerky. All the cook went smooth as silk and the Auber controller worked flawlessly. Like you said time will tell but it is built very well.
