    Pulled is my preference.. lamb shoulder is similar to a pork butt in that it contains alot of connective tissue that needs to be broken down for it to be not chewy or tough, you could braise it and make a lovely stew or pulled lamb pie

    American staffy x ridgeback His name is boss and whenever the smoker is fired up he never really leaves my side.. from trimming to serving, normally after ive spritzed he will sniff me for a couple mins haha.. must be the bbq smell

    try using a heat deflector in your vertical cooker and cooking fat cap down... did the trick for me, no more crusty bottoms

    Cheers guys.. the safe work methods hace been updated to include wearing saftey glasses for this task Its weekly check ups now and an estimated 8 - 12 weeks before looking at taking and stiches out, feels strange to blink, i have to keep telling myself i dont have dirt in my eye lol
