    Karo Syrup Experimenting

"...sometimes use cane sugar from Florida." I react to beet sugar but cane doesn't seem to bother me as much. Interesting. Must be how it's processed.

    Karo Syrup Experimenting

That's fabulous! I did keto for a while to give my liver a rest. Now I eat mostly ethnic German, Polish, and eastern European (skipping the sugary desserts and simple carbs). My A1C has also bottomed out. Pretty wild stuff in the stores--avoid the seed oils used as engine lubricants in WWII...

    Porkapalooza 2024!!!

Looking good, indaswamp! I'd heard of tasso but had not seen a recipe. Did you buy the seasoning or make it? How did the beans turn out?

    Karo Syrup Experimenting

True enough. And the food companies have been putting this stuff into nearly everything; it's one of the addicting ingredients they're so fond of. (Look into burdock, a wild herb, for uric acid and related ailments.) Don't get me started... 🙃

    Karo Syrup Experimenting

Thanks! Taking notes as fast as I can. For years I couldn't make sausage worth a bean, now I feel a bit like Marianski--I wish EVERYONE had this skill and so many others. (If we did, the food companies wouldn't have us over a barrel.) Bidding you a sunny day from NW Minnesota, where we are...

    Easy No Casing Dry Sausage/Saucisson

No kidding. I make a few gallons every year for all this and more--hey, we like vinaigrette too. But yes, raw vinegar has many applications. (I really should shut up, I'm hijacking a great thread!)

    Back To Baking.

"Thinking on buying a dedicated bread slice." Those are the most even slices I've seen in a while--if you get a dedicated unit, nobody will believe you made that bread. 😏

    Easy No Casing Dry Sausage/Saucisson

Nope, no photos. Hoping to find a before/after, but I don't have one. Trust me, before you spray you'll see mold, afterward it just disappears. Magic. (Actually, I do think it's magic.) And there's no lingering vinegary smell. Go ahead and blame me if it doesn't work. ;-)

    Easy No Casing Dry Sausage/Saucisson

Ah, but with a spray bottle there is no wiping! 👍 Vinegar is amazing--I use it to stop mold on cheeses, remove smells from laundry, cure toenail fungus*, kill black mold (it's the only thing that works, I kid you not), and too many other things to list. (Hey, you can even 'wash' your hair with...

    Easy No Casing Dry Sausage/Saucisson

And a thought: if these sausages can mold, why not do as cheesemakers do and spray the 'rind' lightly with vinegar?

    Easy No Casing Dry Sausage/Saucisson

Here's a question: when your saucisson is finished, how will you package it? Plastic wrap seems a bit underwhelming--would parchment be a better choice? Thanks for your reply.

    Straight forward Kielbasa recipe.

Meant to say elsewhere that now along with using a standard percentage of salt I am also doing this with the black pepper--not in every recipe naturally, but certainly with sausage that prominently features this spice. So the bump up makes sense to me, and more garlic is definitely a thing...

    Easy No Casing Dry Sausage/Saucisson

Beautiful. The Italians apparently use red wine instead of cognac. Thanks! Learning lots and will give this a try.

A blast from the past - Head Country sauce

"Made with ketchup, brown sugar, spices, distilled vinegar and Worcestershire sauce..." Sounds like KC BBQ sauce without the sugar. 👍

    Looking for pops recipe

I couldn't agree more. Pops cracked the sausage code for me. And now that I realize how easy it is to adjust the salt level across recipes without error, I can finally solve the puzzle of a favorite venison sausage that has stumped me for years. Very happy camper.

    Looking for pops recipe

And Fueling gave a low-salt percentage elsewhere--somehow this didn't register at first...learn something new every day. 🙂 Thanks.

    Newbie in western Washington.

That's hilarious--here it snows and there it rains! Want to switch? 🤣

    Celebrate Sausage 2024!!!

"1. Italian Salsiccia Fresca 2. Swedish Isterband 3. Bacon, Brie, & Cranberry Sausage 4. Bunnings Sizzle (Aussie Snag) 5. Biltong Salami 6. Poutine Sausage 7. Garlic, Shrimp, & Broccoli Sausage 8. Russian Tourist Sausage..." [Falls into SAUSAGE COMA.] Seriously, I've been reading about...
