    it can be vac sealed from the outside if it is to big to fit in the chamber, works like a regular vac sealer. many videos on youtube showing how, I also like how you can seal Ziploc bags with them above the zip seal and then once opened use the Ziploc seal as needed.

    180 is a warming temp, a brisket normally is done around 201 to 206 but better to go feel not temp on a brisket so cooking at 180 will take for ever to get butter smooth, just my opinion.
