    Smoked round roast, NM style

I've always hated round steaks because they're tough and gnarley. That got me to thinking, unless properly cooked, brisket is tough and gnarly, maybe round roasts are the same. Unfortunately, they are often priced waaaaaay too high for what they are around here, so I've never tried smoking...

The dreaded stall has been cracked by science!!

Sure, but for many a physicist, part of the pleasure is the minutiae. Other than that, I'll drink to beating those brain cells back into submissions!

    Ever heard of Churrasco (Brazil)?

We've got a Brazilian restaurant here that does that, and according to some Brazillians that my dad had to work with several years ago, it wasn't some cheap imitation, the restaurant actually got it right. I used to go there a lot when I was a gym rat and was eating 4000-5000 calories per day...

    Christmas Ideas

Weeeell, I just found out that I am cooking on Christmas, not Christmas Eve, and it'll be the pulled pork, both for eating straight and enchilada casserole. I think that at about 5AM I may also throw a rack of baby backs in there for a very nice brunch.

    Christmas Ideas

I'll be cooking for Christmas Eve, not Christmas Day. I'm not sure what I'm going to make then. My butcher will sell cured but uncooked hams if given a weeks notice, so I may do that. I might do a simple pork loin, or maybe some pulled pork. Then again, I haven't done a chuckie lately, and...

    Woods For Smoking

What can I say? I have a Jeep (XJ) and a chainsaw. I go up with friends and get into the tight spots looking for the stuff and we split what we find. They haul the big stuff in their trucks, but I can fit maybe 1/6 of a cord in my Jeep. Last time, we found two dead and down trees, one of...

this smoking stuff had better be worth it

Yeah, a lot of people like to start the night before. I'd rather wake up at 4:00AM and get things going then. If I am smoking butts for dinner that night, what I'll do is make sure I have a couple of smaller (i.e. 6lbs or so) butts in the smoker. That way, at least something will be done by...

    Woods For Smoking

Never tried scrub maple, but I have just under a half a cord of Gambles (i.e. scrub) oak. So far, I really like it. I normally test new stuff out on hamburgers because it's cheap and quick. When I was deciding if I was going to go back and get more, all I had was some green stuff, so I used...
