The first time I made ABT's, I used shredded cheese. It was a bit more of a chore than cream cheese, but they turned out really well.

I had only used wood chips a few times with my MES30 before I bought a AMNPS. I didn't ever ruin the meat though.
Did you try soaking the chips before throwing them in the loader? Those small chips tend to burn up too quickly if you do not. Small wood chunks work better, but I would soak...
I never turn on the smoker(Mes30) when I cold smoke. I just fire up the AMNPS. At current MI temps, you can even smoke cream cheese and butter(I recommend highly.)
Oh, also, if you are using pellets, be sure to keep an eye on your food. Pellets raise the temperature much more than the dust...

I curently use a MES30, but have yet to use mesquite. I have heard it's pretty easy to overdo it with that type of wood.

I currently use an electric. The Masterbuilt Electric Smoker 30. It works well for me. I usually just cook for 1, but sometimes up to 4 people.
