    I Don't Say No to a Neighbor.

Prior to Wisconsin we lived/worked in Seattle. There, it was a standing joke that UPS would be the one to discover that we were dead. As much as I hate winter's here I'll never leave. We've FINALLY found HOME, COMMUNITY, RELATIONSHIPS.

    I Don't Say No to a Neighbor.

This is what "Community" is all about!!! We're blessed here as well. We've had great neighbors since we moved here! We have block party get-togethers. We did Christmas the past few years as a food pantry drive. Bobbie is a FANTASTIC cook and traditional Polish concoctions are her speciality...

    GrillGrates

I saw a newer post on their web site that might be helpful to anyone using them. Apparently seasoning them with an onion cut in half and forcefully rubbed on very hot GrillGrates puts a super hard non stick coating on them that's good to 1000° f. I'm doing a lot of searing on my RecTec and it...

My first and second cook on a new smoker.

Thanks!! Sandyut, I'd love to give them a try (and hopefully one day I can) but for now I still need to drop another 50# (I'm down 55# since Jan 1). I'm doing the smoke thing as a way to add flavor to my food that propane was unable to deliver. I'll do ribs and brisket but only a few times a...

    Just for the halibut

We use to cruise Puget sound up to the north end of Vancouver island (insurance company wouldn't insure beyond that point without more $$$). Anyway, that looks just as good as anything we caught and grilled. I didn't see any grill marks but not much is showing in your photo. Did you bake it in...

My first and second cook on a new smoker.

Well, the first use of my new RecTec smoker was a disaster! We're both dieting so I decided to try boneless skinless chicken breast. I brined 1 - 11 oz breast for 4 hrs in; 16 oz water 1/8 cup apple cider vinegar 1-1/2 Tbls Kosher salt 2 tsp brown sugar pepper Next I coated it lightly with...

The Science of Smoking and BBQing

Johnmeyer, BIG THANK YOU! Great reading, especially for someone like me who is just getting into smoked meats. It answered my questions about bringing (I've had some disasters there).

The Science of Smoking and BBQing

Thanks for the link. I use to be an engineering systems analyst so I tend to be detail oriented. This scratches that itch.

    Blueberry ???

Best blueberries I've found have been wild ground spreading, from areas that were once filled with pine trees and have had recent forest fires. Hybridized, bush plants seem to have been hybridized to produce big berries with little flavor. Same thing with wild vs hybridized strawberries (IMO).

    Blueberry ???

If you love blueberries give loganberries a try. (Think blueberries on steroids). I use to get loganberry pies from a place on Whitby Island, Washington - AWESOME!!!

    RecTec Trailblazer: Maiden Voyage Impressions

Wow, what a great review! Thanks!!! My Stampede arrives tomorrow and ordering it sight unseen, with ABSOLUTELY NO experience with the results of the smoker has been a leap of faith - especially at it's price. This review helps quell some of that fear.

    Simplicity=perfection

They look great. I'm brand new to this so - How long did you brine it for?

    Smoking chicken breasts

I'm dieting (yea I know, dieting and buying the new smoker...). Anyway, I don't do anything (brine, inject, etc). I do them two ways, kabobs or pounded to -3/4". This way I get uniform thickness or uniform chunk size and they all come out cooked. I run the grill at high and turn them ONCE. @...

    Grill Cleaning

Don't use steel wool. Use brass or bronze wool. Steel wool or for that matter steel tools will leave microscopic amounts that will rust. Just look at SS screws that are installed with non SS drivers.

    New pellet grill question

Rmartinez2 - I know exactly what you mean, and thanks, I will. PS, can't wait. I have a rack of ribs, thick chops and a pork loin just waiting.

    New pellet grill question

Thanks all. I can see it with cast iron but not stainless but thought I'd ask just in case. I also ordered the sear plates which are aluminum I think. Maybe I'll cook up some bacon on them just to be safe.

    New pellet grill question

I ordered my new REC TEC and it's due to arrive in 4 days. My question: I've read the manual but it mentions nothing about seasoning after the initial 1 hr 400° cure. Is there a reason to season it with say bacon before using it? My guess is that because the inside is all stainless, no seasoning...
