I agree about the awesome looking bacon weave. I would like to try one of these. How did you get the ends of the roll so tight? Is the bacon keeping the cheese from coming out?
I did some chicken thighs on my propane smoker to try it out for the first time. They were delicious and cheap. I brined them for 2-3hrs first then smoked at 325. Only took around 50 minutes. Go easy on the smoke. The chicken seems to soak up smoke easily. I intended to cook them to 170 internal...

It did quit smoking after about 30 minutes but I figured it was due to the entire basket being lit (I only had a small amount in the basket to start). I didn't want to lift the lid and let heat out since I was trying to get it hot to season it. Could have been the oil burning off too. Good...
Patience, got it! So stick with the Kingsford for now? I was concerned that was the problem but apparently my lack of patience is the real problem. To add to that, do you add wood chunks when lighting or after the white smoke goes away?
