    John I agree everybody else. I just turn mine a few time during the curing. Also, I just put the meat in a plastic containr with a lid on.

    Needed, 3/8-10mm Stuffing tube for 15lb stuffer

    Lem also has 3/8 stuffer tubes. I use the 3/8 one that came with my grinder and just slip it over the 1/2 tube from the stuffer. Works for me. Just my 2¢ worth.

    I've done it both ways. It's easier to remove the skin after smoking and slicing but your losing half of the smoke flavor. Myself I take the skin off prior to curing. Just my 2 cents worth.

    Absolutly, I've done that way myself. Don't forget to turn them a few times during the cure. Remember the qview when it's all done.

    Great info from all. IMO anyone messing with cures, meaning Prague or Insta cure be it #1 or #2 should educate them self. These two publications are available online or in book stores. They have a wealth of information and are invaluable to me. Just my 2 cents and qview.
