Thanks Tropics, I can honestly say you won't regret it. I want to try maple next but real maple syrup is expensive so I will probably just try brown sugar. The wife says no more till most of this is gone.
Thanks Reinhard, I don't think I'll be buying bacon very often. I wasn't sure how they would work for ABTs, but it was perfect. I had to use a toothpick because I sliced it to thick and was scared it wouldn't stay wrapped. Anyway, thanks again.

Awesome, I have three pallets in the garage that are going to be my MES stand (just gotta finish the other 1million projects I've started). I have a cooler made out of pallet wood and it stained the same way, and I love the rustic look. Great job, and great way to reclaim materials.

Pulled the turkey about 10 minutes ago, got it resting for the next hour then I'll slice. It was really juicy when I was pulling the probe out of it. Here is how it looked coming off:
Got one going now just to make sure I'm ready for all the ones I plan on buying. I have 5 guys at work that want me to make them one. Gonna be several smoked next weekend I imagine.

I use an MES 40 as well, there are some learning curves with it, but it can put out great Q! First suggestion would be grab yourself a good dual probe thermometer, I use a maverick 733. It's pretty essential since the MES can read up to 40 degrees different from the actual temp...
Update:
Been on for 2.5hrs. IT on the turkey just hit 140 and the pastrami is at 127. I flipped them both and they will continue on that side till finished.
