    Thank you Joe. I do have a food saver and usually freeze in 1 lb. portions.  It seems like the consensus is to pull, bag, ice bath then freeze. Looks like I have a busy afternoon ahead!! Seth

    Sorry... Now for the details. Dinner was to be served at 6:30 but I needed to be done cooking by 6. It was 12 lbs trimmed and nearly 5" in diameter so I figured 5-6 hours leaving extra time for any funny stuff. I put it on at 11:30. Smoker held nicely between 230 and 240. It had reached 130...
