Did the therm probe checks last night and they were spot on for boiling water. Going to run the rec tec empty today and place my probe in different locations. I really want to do a brisket this week but I don't want to mess it up either

I think 195 would be to high for me with Tri tip.. I stuck to 145 since that's what I used when I would throw it on my gas grill figured smoker would be the same.
I used brown mustard and oak ridge bbq seasoning for the rub.. Cooked till IT was 145. Then j wrapped in foil. Wrapped that in towel and threw it in an empty cooler for about 30 minutes. Everyone loved it!!!
