It's time for my 250 build

Very nice work!  It looks great.  I look froward to seeing the upgrades and extras you were talking about.

"Baron Von Schwein" 120 Gallon Horizontal Tank RF Build. QVIEW!

I just noticed your question about reinforcement.  Without knowing what is already there, it is hard to advise.  But one thing I can see is that you might want to beef up your suspension.  If the trailer becomes so heavy that it ends up with frame on axle, it will smash your wiring.  This is one...

"Baron Von Schwein" 120 Gallon Horizontal Tank RF Build. QVIEW!

That looks like a nice find.  I would suggest moving it closer to the side.  Keep in mind you might want to put a shelf on the front and it could come to the edge of the wheel well.  Another advantage to having it set to one side is you will have room for wood and other items on the side...

"Baron Von Schwein" 120 Gallon Horizontal Tank RF Build. QVIEW!

Spoken like a true pipefitter.  I have been a fitter welder for over 20 years in the piping trade and there is one common thing that I have noticed in every state and place that I have worked and that is, that nobody likes rework.  I have sticker in my gang-box that says, W.A.S.P. (welders...

"Baron Von Schwein" 120 Gallon Horizontal Tank RF Build. QVIEW!

Oh, well thanks for your awesome wisdom there Michael and for the "jab" at some insignificant member status.  Obviously, you missed the point (which I don't know how you could with your master status and all).  The point is, don't make a mistake that takes lots of effort to do that isn't worth...

"Baron Von Schwein" 120 Gallon Horizontal Tank RF Build. QVIEW!

I always find it fun to design and build a new cooker.  My mind gets to grinding on all of the details.  It is interesting that I have spent a lot of time thinking about your cooker and what I would do if I had your resources.  This whole rib cooker addition has really sucked up a lot of my...

hot and fast brisket on a Lang smoker

IMO once you go fast, you don't go back!  I can cook a 17 lbs brisket in 5.5 -6 hours.  I run my horizontal at 275 - 300*  When the meat reaches 160* in the point I put it in a pan with 24 oz. of water and onion soup mix.  It spends the rest of the cooking time in the pan covered with foil. ...

What is a Shiner and how is this prevented if it is undesirable?

That is an interesting point to consider.  "Not buying Sam's ribs for competitions."  I spend about $150.00 for Wagyu brisket and consistently come out in the top 6 but when it comes to pork...I am only spending about $30.00 for my ribs and about $25.00 for my Boston butts .

What is a Shiner and how is this prevented if it is undesirable?

Thanks for all of your input.  I too but my ribs at Sam's Club.  They come cryo-vac'ed with three to a package.  It is hard to tell exactly what you are getting.  Living in New jersey has its limitations on meat purveyors.  As far as preparation goes, has anyone experimented with the 3-2-1...

What is a Shiner and how is this prevented if it is undesirable?

I was under the impression that a shiner is when your rib tips are sticking out of your rack of ribs.  But at a recent KCBS contest, someone referred to them as the bones that stick out of the bottom of your rib slab. Coincidentally, it was at this very contest that I have developed a case of...

"Baron Von Schwein" 120 Gallon Horizontal Tank RF Build. QVIEW!

One thing you may want to consider...when you start making holes in the main body, it will start to make zones in your cooker.  It looks like you are building a reverse flow design.  With that said, I think that you are looking to have even cooking throughout your main vessel.  When you add...

"Baron Von Schwein" 120 Gallon Horizontal Tank RF Build. QVIEW!

Here is a 275 gallon oil tank that I mucked out 6” of sludge from.  I used kitty litter to soak up the oil and then I scrubbed it out with Simply Green.  I burned it in the way I described earlier.  As evidence of no residual flavor impartation, we have won a dessert contest, 3rd place in Iron...
