    Blackberry BBQ sauce

Well I've officially made and tried both recipes.  Door number 2 is the clear winner.  Just the right amount of kick, however I feel like the blackberry gets a little lost in sauce #2.  While sauce number 1 came out very thin and full flavor blackberry which was a bit too sweet for me.  I...

    WSM VS BGE GO!

Nice set up man, but looks way to expensive for me.  I am not a huge fan of the char griller set up.  I thought I was until I really started getting into everything.  This hobby is one hell of a learning experience and my wallet hates me for it.  I went with the WSM because I like the space...

    Blackberry BBQ sauce

Years ago when I was just a young lad.  Not that I'm much older now.  I tasted a blackberry BBQ sauce that has been perplexing me for almost 10 years now.  It was the greatest thing I ever tasted as a bbq sauce.  The chef put it over some tenderloin chunks and by far has been one of my favorite...

    WSM VS BGE GO!

Well I have decided to go with the 22.5" WSM.  I had to see them both in person to make up my mind and my jaw dropped when I saw the WSM.  It is a fine piece of equipment, the BGE on the other hand was less satisfying.  I like to do a lot of smoking at once and the BGE just wasn't practical for...

    High Temp propane Grill

So Im not sure where to put this in the forum and I'm sorry if this isn't the place for it, but Im finally getting a WSM 22.5 for christmas and getting rid of my Chargriller duo.  What I've been working on is I took my old shed and insulated it and ran power and water to it and added a few power...

    WSM VS BGE GO!

Now I have no idea what to do.  Why are there so many smokers in this world =p.   I just want the one that will last and make me happy with minimal effort haha.

    WSM VS BGE GO!

Thats the one thing from keeping me pulling the trigger on the BGE, Grill space!   It's a necessity for me since I like to make a lot of food at once.  The reason it's still ahead in the running is because I live in Pennsylvania and our winters get pretty harsh and I'd like to smoke year round...

    WSM VS BGE GO!

I want everyone opinion on both pieces of equipment.  Is quality of the BGE really worth the price gap?  Where is the cheapest place you've ever found both pieces?  Can you really cook enough on either?  Can you throw in a third option for me?  Right now I have a modded char griller duo which...

    Ribs, to tough underneath?

Sounds like this is exactly my problem. Thank you, I was also not babysitting the stick burner...  I think I may of had some chunks flare up and stabalize before I even knew there was a problem.

    Ribs, to tough underneath?

As I said the top of the ribs were perfect, fall off the bone and tender.  The underside I couldn't even bite off the bone it was so dry.  Tucson might be right about the foil leak.  There was nothing left in and I really didn't think to much about it.  but wouldn't that have made the whole rack...

    Sausage Racks

Where can I buy a sausage rack for the smoker to keep the sausage up off the grate?  I'd prefer to buy one locally since Im doing it this weekend but if I have to wait that's alright too.  I can't seem to find one.  Also while we are talking about racks, does anyone use rib racks?   Do they...

    Ribs, to tough underneath?

Yep I removed all of it.  The under side was like trying to pull apart really tough jerky...  It was late when I pull them out of the foil, but I cut off a rib to try and I don't remember it being tough so maybe from putting them in the fridge?

    Ribs, to tough underneath?

So I did my first set of ribs last weekend and the meat and smoke was all awesome except for the underneath was very very tough.  Here is what I did,  Smoked in a horizontal smoker with hickory wood and lump charcoal using the minion method.  Kept around 230* minus a few temp spikes that I...

Does any buy wood by the cord?

I mostly use hickory and I'm just starting to really get into smoking, but I've been going through a bag of chunk a week it seems.  I have a wood stove in my house so the wood would serve a dual purpose,  I was just wondering how much the rest of everyone uses.

Does any buy wood by the cord?

How long would a cord of hardwood last you for smoking?  Im wondering if it is in my best interest to buy a cord of hickory over the big box stores wood chunks and just chunk it all myself.

    New from Pennsyltucky...

Hello all, I guess it's about time I introduce myself.  I am a long time meat lover, short time smoker.  About two years ago I bought a char griller duo and I've had nothing but problems with it.  It works fine as a grill, but the smoking hasn't been fantastic.  I stopped wasting my money on...

    Char Griller duo help needed!

So today I decided to see if I could get my char griller duo with firebox to work properly instead of buying a new smoker.  I did the dryer vent mod and I made my own baffle.  I will include pictures tomorrow.  I also drilled and inserted 2 more temp gauges right at grill level.  the baffle...

    Vertical Electric Smoker

Okay well after my searching for answers I still have no idea what I want, but maybe if I describe what Im looking for I can get some more opinions.  Basically I want to be able to smoke a few days worth of food at once.  If I want to do a brisket, some ribs, and couple chicken halves at the...
