I think I know what the problem was... and nothing to do with the setup itself. I only did about 2/3 of a row in the tray. I usually nuke my pellets for 2 mins when I have a full tray. I nuked the handful for the same two mins and probably dried the crap out of them. The whole thing burned...
Decided to build the mailbox mod for my AMNPS.
Previously I was putting the tray in the smoker, which seemed to work pretty good. I had the chip tray loader tube pulled out about an inch an the top vent opened all the way. Seemed to usually get a nice, thin blue smoke.

Here's my first attempt at a reverse seared steak! I seasoned these NY strip steaks with motreal steak seasoning and then smoked them to 110deg in my MES30 with apple pellets with my new AMNPS. Here is a shot of them just pulled from the smoker:
Then I seared them for less than a minute...
Just looked up a STC1000 on Amazon to order... forgot the fact that the top end of this controller is 210 degrees. I'll have to find a different controller if I want toto be a full time device.
Yup! I've seen the paint can heater... and i'm sure that would work! In my fementation chamber, I use a very small space heater in lieu of that.
After some discussion here I just went back to the Masterbuilt website, and the MES30 is only a 800 watt element... so that translates to 6.67...
