some of them turned out better than others..i started to use aluminium foil but against my better judgement i took it off..it wouldve protected against the flare ups, but never the less the flavor was bold and delicious..

Has anyone ever tried grilling brats wrapped in bacon? not flattened brats, but whole brats to be put in hot dog buns.. ive been thinking this over and really want to try it...
my questions.. do i cook the bacon first then wrap the brats? do i wrap both uncooked and throw it on the grill? ...
actually i just bought the honey from a store in pensacola florida called ALL Spiced Up..I can tell you that Jalapeno Honey im using does taste like the candy Hot Tamales...my problem right now is im having trouble gettin the temp of my brisket above 165...grrrr
no im not replacing it..the work will get done..it will just take some time..it will be a "when i can get to it" weekend project..my wife and i just had our first child on tuesday, so my hands will be full for some time..today they are resting, so that means i get to smoke some celebratory ribs...
So I went and took actual measurements today of the smoker..
Main Chamber: 5' Wide 3' Tall and 3' Deep
Fire Box: 28" Wide 14" Tall and 14" Deep
Cooking Grate: 53" x 29" which is 1537 square inches..
