i decided on a sirloin tip roast..rubbed it down with some EVOO, seasoned salt, black pepper, paprika, and some rosemary garlic..cooking it to about 150-155ish..whatever a good medium is ..
so im planning on a smoke in the next few days and am wondering what cuts of beef do you guys think will go best with mashed potatoes n gravy, corn, and hot rolls? i like brisket but am wanting to try something a little different. i was thinking of maybe a sirloin tip roast, or smoking some...
well i injected it in the smoker shortly after i started the thread, about 30 mins ago..the birds been on for 2 hours and is currently at 130..im just hoping that it tastes good :) thanks for the help

like jimmyj says..what are you using to monitor the temps? the basic factory therms are crap..there are plenty of threads here about therms and what not..if you need a good one..tjohnson runs and excellent business and sells a few that are well worth the pennies spent..

so ive been smoking some breasts lately and have been putting them in brine..however my wife doesnt like the smell of brine and consequently when i make a brine the whole house smells like brine..so its out with the old techniques and in with something different..this will be my first time...
so im starting my first uds build..
unfortunately the dreaded red liner is in both of the barrels i have..which i will burn and scrub out later..
ive started tho, by drilling 2 holes on 3 sides of the barrel.. the first is 6.5 inches from the top of the barrel and the 2nd 15 inches..

i think most ppl suggest letting it season for at least 6-12 months..it helps if you get a moisture detector..i think i read somewhere on SMF that something like 8% moisture in the wood is key
