The smallest chips I've used are the Cameron's products chips. I smoked salt with them, but they didn't seem to give me the results I wanted as salts should be smoked low. Don't know if that was part of it or not.
Well, Christmas went of without too much trouble. I ended up compromising on temp. I brined the turkey and chicken overnight using 2 cups both salt and brown sugar for 1/2 cup worcerstershire, 1/2 cup soy sauce and added water to three gallons.

I've used really ground chips almost like sawdust, and large chips, but never pellets. I heard somewhere on here that the pellets smoke differently in the mes. It'll be good to hear more on this for my own knowledge.

I find that in my case it's smarter for me not to think too much. However, I'm wondering if I would need to smudge the turkey (thick smoke in the beginning) with a four or five hour smoke time. My wife likes a heavier smoke flavor.
I guess I'm actually doing it at 225*. Also, should I brine and inject marinade? What's the harm? Longer cook time?
I'm calculating 7.5 hours for the turkey, 4 hours for the chicken and fatty. Maybe increase time based upon how many times I open the door and adding the marinades?
