Kid, I think you'll actually find that your second brisket will have little affect on your overall time and/or temps. Use your digital thermometer on each of them and you'll be fine. I think your estimated time frame is fairly close.

Mike, you might be able to save quite a bit of time by not capitalizing every word in a sentence. No offense intended, just a thought. I haven't experienced your problem, btw. Things seem to go quite smoothly here.
If it were me, I'd put the paver stones down. Being that it's a propane unit, you're not likely to have sparks flying out, but I tend to err on the safe side.

Busboy, I'm not familiar with that particular cooker but I'm sure someone that has one will be along shortly. Be sure to season your smoker before your first smoke.
