    OK Joe Highland Reverse Flow

I have been in two of the big box stores recently  that carry OKJ's (Highland and LongHorn) and have not seen a Reverse Flow model in their inventory.  I would suspect the big stores probably buy bulk shipments, perhaps seasonally, so we may not see the reverse flow models actually hit the...

New - Oklahoma Joe's Highland Smoker

I cheated.  A friend of mine is the sheet metal guru, is in thr business and even does architectural roofing restoration. So I used leftovers in 18ga. SS sheet to fabricate my convection plate and FB baffle.  It's been raining last two days, I'll snap some pics when I am able. Drilled...

    Leftover Ash

I screen sift my woodstove and BBQ smoker ash and reclaim the small chunks of charcoal, that can be burned as fuel again.  If not, no biggie, charcoal can be beneficial to compost, garden and lawn. Mostly the ash I scoop goes directly  into the compost pile and gets turned in. I try to mix it...

Look at it this way,  its only 6 bolts? or 8?    Hint:  make a small table, like with cinder blocks or something, directly under the firebox, unbolt, and set it down just a few inches on your makeshift table. Move it away just enough to apply the RTV around the opening, and around each bolt...

Tell Me about Making and Using CharWood

Background:  I cut firewood in my area, and have access to Oak, Cherry, and a few others. As i process the firewood (for the woodstove) I toss aside chunks of heartwood for drying and later use in the smoker. I use wood chunks more than chips and mix with charcoal in a charcoal basket, minion...

    Field maple

I have cut a lot of firewood here in the Mid Atlantic region of the US.  Had not heard of "field maple".  Just looked it up, it appears to be a UK/European species, so, it will take someone over there to speak to it's food cooking ability.   It looks like people may tap it for syrup?  So that...

New - Oklahoma Joe's Highland Smoker

Interesting. Mine is one of the newer ones with no top vent.   After doing my mods: homemade SS convection plate/baffle, lowering the stack inlet inside of cooking chamber,  and sealing,  I seem to have a nice air flow and stable heat across my grates. I will make an educated guess and say...

Thanks, I will also add, when reading about people experiencing an overly smokey or acrid taste, (beyond a fuel quality issue) I think it might be caused by poor airflow, and the smoke is stagnating in the cooking box, rather than moving along and out of the stack.  This usually leaves the user...

Sealing things up doesn't necessarily make things worse.  I have now "sealed up" 3 smokers over the past 20 years, each one performed better after sealing them up.  The idea is to get the heat where you need it, across your cooking grates, not have it leak out before it does it's job. If you...

I modded my OKJ Highland based upon my experiences with 2 other smokers.  I agree, also, it is important to cook on it, then mod based upon your experiences.   As mentioned above, if someone has an airflow problem, then chase that issue to find out why and what needs to be done to remedy the...

    Hello everyone!

Thanks everyone. Kayaking around my area is mostly coastal touring, Chesapeake Bay and tributaries.  I have a Dagger Axis kayak.  I'd like to try some river runs, Class I & II stuff when I find the time.   I was just down in FL, in March, west coast,  and yakked around MatLacha area, mangroves...

    Hello everyone!

Thank you Phatbac. For anyone who is curious, the avatar pic is my old smoker's firebox, after many years of firings, rain, and wear.

New - Oklahoma Joe's Highland Smoker

I found, on my old smoker, that the visible RTV that was "exposed" to the fire and flame inside the firebox appeared to be charred and degraded, while the stuff that had been encapsulated between the firebox and cooking chamber was still viable and providing a seal.  The heat ratings on RTV...

Jon,   I think the higher quality way to your RTV job is, to disassemble, then RTV between the firebox and cooking chamber.  Make sure to use High Temp RTV,  there are several flavors that will say "High" but read the fine print for the higher temperature stuff.  You will see pics, I think even...
