    Fast Smoked Brisket ????

I would almost be willing to bet that this person's brisket was closer to 7 lbs and not 17 lbs. Yet I still don't believe it was 195 degrees in 5 hrs. Like I said in my first post, I have never smoked a brisket, so I can't prove anything, but I have read enough on this site posted by experienced...

    Fast Smoked Brisket ????

I talked to a person today that said he smoked a 17 lb Brisket this week end in 5 hrs. He said at 5 hrs it and an internal temperature of 195 degrees. He said it reached that temperature without ever stalling. He said Smoker temp was 250 degrees. At 5 hrs he took it out because it registered 195...

    Thermometer accuracy

I have a Maverick ET 33 and also a Taylor Oven Thermometer Model 5932 http://www.essentialhardware.com/taylor-precision-5932-oven-kitchen-thermometer-size-6-212910.html I have tried my Maverick Probe and the Taylor Thermometer on the same shelf together and found both to register the same...

    heh, I started a fire!

I place them in the chip loader, but not a full load, probably 1/8 cup when I do it, but I only do that on something that is going to take an hr or 1 1/2 hrs to smoke and then only one time at that. On longer smokes, I don't as long as the pellets are staying lit. After reading another post...

    heh, I started a fire!

Rick, nothing tastes as good to me as it once did. Ever since I had 6 weeks of daily radiation 3 1/2 years ago and am now on chemo again for the third time, my taste buds are not as good as they once were. Seems I need a stronger taste in everything I eat now, which may be why I like wood chips...

? What gen is this Masterbuilt 40" electric smoker

I can't tell which model since it doesn't have a glass door. The best way to tell is to open the door and if it has a plate that slopes to the left with a small water pan on the left end, then it is a Generation 2.0. If the water pan is level and across the entire smoker at bottom rack level...

    heh, I started a fire!

Interesting thought there...... Maybe try just a thin single layer of chips???? I might consider that the next time I smoke something.

    heh, I started a fire!

Rick, for my tastes, the wood chips give better flavor than the pellets do. I find the pellet smoke to be a bit weak, plus their flavor isn't quite as good as the chips, anyhow for me their taste isn't quite as good. For others like yourself, it is the other way around, so it comes down to a...

    2 attempt w/ribs

Bones, it is a matter of taste preference. I've tried it both ways and prefer mine to be foiled after 3 hrs. I do mine 3 hrs, then moisten ribs and foil them, the put back in smoker for another 1 1/2 hrs and they come out great and extra tender.

Major MES40 Gen 1 mods.......count them racks baby!

Won't this make all of the grease that drips from the meat, run off this flat plate and onto the big flat pan in the bottom of smoker?

    MES Model 20077915

With the Remote Control it shows plus the vent on top, it is definitely the most latest and improved  version of the 2.0 that was made at the same time the BT's were beginning to come out. Unlike the 2.0's with the vent on the side made before it, all parts on this particular 2.0 are replaceable...

New mes30 owner, first smoke issues

I have more space between Maze and Coil on mine than he does. However, mine is a 40" and I "think" his is a 30", so probably not as wide maybe????

New mes30 owner, first smoke issues

Fill the tube half full, then hold it horizontal and shake it to even out the pellets all of the way thru the tube, but still the length of tube. I think this should put out less smoke than a full tube of pellets, but still smoke for 4 hrs.

New mes30 owner, first smoke issues

The Tube should work there as long as you don't need more than 4 hrs of smoke.

New mes30 owner, first smoke issues

I elevate mine approx 2" or a bit more off the pan in bottom of my 2.5 with a small wire rack I bought, so air should be able to get under it here, right????

    How Many Mes Owners Here?

11 pounds for $29 is a good buy compared to what they sell for here in OKC. That 11 pounder would cost you around $45 - $50 here.

MES 40 6 rack vs 4 rack models?

It is definitely the 2.0 Model as the 2.5 BT has a cover over the front controller and the one in picture doesn't, plus if you zoom in for a close up view, you can see the sloping plate under bottom rack with the little square water pan on the left end of it of which the 2.0 has. The BT has a...
