    Thats a nice lookin piece of meat Bear.  I second the buy the cheap smoker, EARLY so you can season and cook on it. Then if you leave as a gift it will be seasoned, cooked on and most off all you can explain how to use it.  Good Luck -  They (the family) will always remember how awesome it was...

    Thats all I did, Throw 'em naked into the ice water bath, towel 'em off.  I have got more compliments that they are the best ever tasted by people so covering them to cool them would just be a wasted effort. Thanks again BearCarver.

    Was just looking thru a LEM catalog and their little smoker gives the discription of the inside and it said the bottom was galv. They must know it's safe?

    Update:  Put a propane burner (fryer) in the barrel, used the rest of fryer as a support for a cast pan for dust.  Works better, things don't seem to get over smoked. Now it's more a Set It & Forget It smoker.  I want to eliminate the barrel so I'm searchin for a smaller steel tank or box that...

    I just did Bears Sticks, they turned out GREAT, I did skip the 2nd day in the fridge, Why the 2nd day Bear? does it mellow the spices more ?
