    The little smokehouse (DONE)!

I used the hot plate during the BBB smoke and held the temp between 100 and 120 the whole time. It was about 70F outside and the burners were set at about 20% output. Worked great. Filled about 2 1/2 rows or so of hickory, oak, and apple pellets in the AMNPS, and it worked great as usual.

Confused by an old recipe, please help!

Good luck bigfish. If your wifes family is like my wifes family, no matter how good it is it will never be as good as when your GFIL made it.... I agree with several who posted here. I bet the conc. sausage seasoning was a premix that he bought somewhere local. You might be able to use a...

    cabella's mixer

I hate mixing. I almost think a mixer would be a better purchase than a stuffer... at least when using a grinder to stuff my hands don't hurt from being so cold! It's all good though, I don't want to think about something else to clean...

what bones are safe for dogs?

You only shouldn't feed dogs COOKED chicken bones. We feed our four dogs (pugs) a raw diet. Nothing cooked or processed at all. We feed mainly chicken, bones and all. Sometimes I do a coarse grind (the kidney shaped plate) of chicken thighs and bag it in quart bags to freeze. I do this only for...

Made up some more BBB (pics!)

The supply of buckboard bacon (BBB) was getting dangerously low in the freezer so here we go. I dry cured three slabs I saved back from recent sausage endeavors, about 7-8lb total. (This is not to be confused with dry curing like with sausage) All I did was weigh each piece, add appropriate...
