The last one I did as everyone else, Soak and change every 2 to 3 hours. I was only able to do it for about 8 hrs because lack of time, then I rubbed it good with course black pepper and into the smoker.. It was great like Voldaddy said it is pastrami and man is it good.... Give it a shot...

MoFo I run mine thru the top vent. I am going to put one in the side as soon as get a 1/2" UF water tight connector fitting. But right now I just lay a 2X4 piece on top of mine and put the transmiters on it, they dont get hot that way. Hope this helps out a little...
