    FAST n' HOT Brisket

My eyes are fine. And I know enough about smoke rings, amongst that being, for example, that a smoke ring cannot be tasted. My point was that "visually appealing'" goes a long way when it comes to the adjective; "appetizing". I don't eat cutting boards and so how much fat is left on a...

    FAST n' HOT Brisket

Thanks, for the write up. It is much appreciated. Especially the breakdown of the pros and cons. But this method is not for me. No smoke ring, and it looks tougher than leather and as dry as the Sahara. A wise man once told me “we eat with our eyes”. What he meant by that was that if food...

Pellet Smoker Bland Compared to old WSM

Propping the lid slightly open in my case, made my temperature issues even worse as the wood ignited even more from the increased airflow and oxygen from having the lid open. Again though, the results of others may be different from my own. But in my own case, I felt that what seemed like a...

Pellet Smoker Bland Compared to old WSM

Have not gotten the chance to try the Royal Oak pellets But did try the Lumberjack Charcoal pellets about a year or so ago. Don't know if they still make them. Either way, they didn't give me a much noticeable difference in flavor than the Competition Blend.

Pellet Smoker Bland Compared to old WSM

Personally, I had poor results using this diffuser with loaded wood chunks. Of course, others may report more favorable results than my own. But in my particular case, the chunks tended to ultimately ignite, sometimes early in the cook, and the resulting flames tended to throw temperatures...

Pellet Smoker Bland Compared to old WSM

it's going to be difficult to match the smoke profile of your WSM with your Rec Tec RT590. I've managed to get it somewhat close in my own Rec Tec RT590 using smoke tubes. But my WSM, which is heavily modified just turns out a better result. I use a temperature controller, Fireboard 2 Drive...

    What went wrong-brisket?

Do you have any dogs? I don't mean that as a rip, but do you have any dogs? When I get a result, the type of which you mention, and I certainly have, I've found it better to feed it to my dogs. They love overcooked brisket. Indeed, watching them struggle to choke it down is somewhat...

Masterbuilt Gravity Series 800 - one year in

I'm trying to learn as much as I can about these as well and appreciate the original post and all of the comments and insights which may be helpful to the original poster. They also have the potential to be of benefit to those other owners of other type smokers, who are attempting to learn...

Interesting Box Store Gravity Feed Smoker comparison video

Well, I don’t want to stray any further off the beaten path here and go any further off topic. But are we talking about doing a reverse sear on a steak? I can’t think of much anything else where I’d start off “low” and then apply a very hot sear. If we are talking about a reverse sear, well...

Interesting Box Store Gravity Feed Smoker comparison video

I have used your method as well, but I have found that this works better for me. This is the Arborfab charcoal basket and minion starter basket. Both are perforated. The minion basket, which is perforated, is intended to stay in place during a cook. No need to remove it, because it is...

Interesting Box Store Gravity Feed Smoker comparison video

Thanks RCAlan. This is really what I was looking for, as I had wanted as much info on these as I could get, prior to making any preliminary considerations of purchasing one. Watching the video, while a worthwhile endeavor, still did not, for me at least, answer the pressing question, the most...

Interesting Box Store Gravity Feed Smoker comparison video

Don't get me wrong. I like gizmos as much as the next person. But to my eye, these gravity fed charcoal smokers are, well, ...gizmos. That's why I looked at the video and took it with a grain of salt. It's a gizmo comparison. I see this much in the same way as I see an iRobot vs a broom or...

Interesting Box Store Gravity Feed Smoker comparison video

What you describe above about smoldering fire vs small but hot fire, is indeed what I was thinking as well. I light my WSM via the minion method. Small but very hot center. Nothing smoldering about it. Now granted, my WSM has an oversized basket in it which will hold just under 40lbs of...

Interesting Box Store Gravity Feed Smoker comparison video

As already mentioned, a WSM can run 10-12 hrs on one load of charcoal no trouble. Also, one can in fact sear and grill on a WSM as well. The easiest way to do that is by using the bottom section of it. Another way of doing so involves moving the charcoal grate up to the water pan tabs...

What's the difference in taste from food cooked in a gravity feed charcoal smoker vs say in a WSM charcoal smoker?

Interesting Box Store Gravity Feed Smoker comparison video

Interesting video. however, for the most part, I see these as a solution, looking for a problem, while bringing potential problems of their own. I can get set it and forget it capabilities with a WSM or a kamado and a good temperature controller. Minimal moving parts and a lot less to go...

First brisket, 21 hours and accidentally good

No such thing as good luck with brisket. Only skill and bad luck. Nice job, That looks fantastic.

MBGS Slow getting to Temp in Cold Weather

Reading what you're going through with the frustration, the WSM, which was the recommendation of some in here earlier, might be a better option at this point. It is arguably at the very least, deserving of another look and further consideration in light of the developments and your desires to...

MBGS Slow getting to Temp in Cold Weather

Hopper caught fire??? Wow, good thing you didn't leave it unattended. Sorry to see that you're having issues already, but then perhaps better now than later when it's out of warranty or past the time when you can return it via Amazon. Good luck getting it all sorted out.

Looking to Purchase a Charcoal Smoker

Wow. 3hrs of sleep. Good to see that everyone has a different way of doing things. Glad to see that whatever works, works. 👍 I sleep all night on an overnight cook. Be it on my Rec Tec RT 590, or my 22 in WSM with FireBoard 2 Drive controller. Both of these cookers will hold within...
