    Brisket - There is no reason to cook over 8 hrs

    No, this isn't correct. The cook temp maybe higher than 212, but the internal temp (where your purposed liquids are) is far less. Remember you are stopping the cook when the internal temp is max 200.

    I would be inclined to think the "nasty" smoke you are getting is steam from soaking the chips.

    If you have the ability to smoke it at a higher temp. like 300-325, no need to worry about the danger zone. But to answer your question, start it in the smoker, finish in the oven.
