I found it in my local grocery store in the deli area where they sell packaged cheese, but it taste just like swiss...IMO. So, I would say you could use swiss.
Just wanted to provide an update. My weekend with 3 of my closest high school friends from 30 years ago has concluded. I did 80 smoked buffalo wings - asian, BBQ and some sweet/hot. Sides ended up being Cowboy Caviar with grilled corn (have to do it that way from now on) and some Guinness beer...

I would probably suggest some type of brick pavers. If you did it yourself, an area that size wouldn't cost too much. Just be sure to properly perpare the ground first and finish it properly.
I have used it on double smoke ham a few times and it was really good. The eaters liked the honey more, but I didn't have any issues with the maple syrup.
The only complaints I get is that it makes them hungry! Most of the time the smoke seems to blow through one neighbors yard....they are use to it by now and will ask what's for dinner. We invite them over from time to time.
