    New ( to me) slicer came today.

    Zeny Electric Meat Slicer New Blade Commercial Deli Meat Cheese Food Slicer This is also a beast to move but it's the best slicer I have found. The user manual is written in a mix of Chinese and English and is of no use. I bought this on sale on Amazon prime for about $288.

    You can buy it on Amazon in 1 pound packs. Some grocery stores carry it, but not many.

    Yes, tender quick contains both sodium  nitrate and sodium nitrite. I added a small amount of pink salt (1/4 teaspoon) to give my final product the cured ham look. Tender quick by itself may not always give that "pink" ham look.
