Wow! Excellent post Eric. I have a much better understanding now. I made a mod on my Kamado Kooker to add a water pan. I live in San Diego where it is mostly dry. I feel water adds to the process and I always toss a couple cut up onions Garlic and whatever wine I have laying around in it.
