    Another AMNPS-MES Question

Hey MadDawg, That's the fun of making your own, you can do whatever you like. I've done 4 hours to 20 hours for bacon(20 was way too much for me). 2-6 hours for cheese (I like 2-3). Have fun JD

Just Bought a Masterbuilt Model 20051214, Propane Smoker from Sam's

Okey doke, I can now say a few things about the Masterbuilt 44XL gasser. Unlike the MES smokers this is not insulted and does not have a thermostat. Keeping a temp is damn near impossible! The sun goes in, the temps fall. The sun comes out the temps go up. The wind, really reeks havoc on the...

    Another AMNPS-MES Question

The tube is an exhaust baffle for my motorcycle with a small adjustable Thermaltake pc fan. I open the chip tray 1" and run the fan on its lowest setting. I have no issue with the temp or smoke using this setup. In fact, the temp stays extremely even with the fan running. The only other change I...

    Masterbuilt smoker vent position?

I'd say that my only problem is when I'm smoking a lot of meat that's cold, the smoker can't seem to recover temperature-wise.   Hey Dogwalker, Yeah, that is a problem in the cooler weather. I let my beef come up to about room temperature and my bigger pork cuts a few degrees cooler. With...

    Masterbuilt smoker vent position?

Hi meatstick, I just got Masterbuilt XL44", 2 burner, 2 door. It has 5 shelves, and the lowest shelf is about 8" above a vent(left or right) I plan to put my Amazing 5x8 right on the shelf for cold smokes. Not sure about hot smokes yet. Was planning to play today, but we are getting freezing...

I am so sorry to hear. My hands / fingers are like that from being a stupid kid. Be careful with temps and cheese. If certain kinds get to warm, you can wind up with a gooey mess dripping on everything! A real pain to clean up!! JD

Disappointed with amount of smoke; bought a master built electric 40" added updated part sent by mas

Oh BTW... 30 degrees is a fine temp to cold smoke. Cheese has a lot of salt in it. Bacon is brined and the burning pellets will add 20-30 degrees. JD

Cold smoking I never have problems keeping the pellets lit. I did two loads of cheese on the first. Tonight there will be smoked mozzarella on our pizza! And Sunday toasted smoked cheddar and provolone samishs and Campbells tomato soup for lunch. 128539 JD
