On my Auber blower there is a flap/shutter in the adapter that closes when the blower isn't blowing to completely cut off the draft, I was wondering if there is a similar valve with the Q-Master blowers.
If electronics projects are your thing or you have a friend who likes making stuff, you could make the Heater Meter which is a all singing, all dancing BBQ controller and data logger based on a Raspberry Pi and an Arduino

Afaik, the Chinese one is meant to be ok. There are people on the Kamadoguru forums that rate the more expensive model.
I use the Auber one which is very simple and works well for me but I did have to buy it from the States. Though knowing what I do now, I would probably just make one if I ever...
Has any one used the Makro/Booker frozen boneless pork collars? Are they any good and what sort of size are they, I'm hoping to get them into an undercounter freezer so aren't going to fit if they are still in the box.
Also what did you cook with them?

Wade, I bought a Uuni 3 burner upgrade for my 2s a while ago but hadn't got round to fitting it yet. So seeing your post (and being at a bit of a loose end today) galvanised me into fitting it and giving it a test run.
Things I've discovered about it are:
It generates quite a lot of smoke and...
There's a Plumb Center in Ashford, if you want to check out the Balcas Brites which work well for me. I have to order mine click and collect because they don't keep them in stock at my local, and when I collect them they only ever seem to charge me about £3.50...
The Uuni takes a bit of time to master Wade, I have the 2S and once I learned how to use it, cook fantastic pizzas pretty much every time. My first attempt was a disaster.

What a great review Wade. I wish these had been available when I was first interested in smoking, I couldn't afford a WSM so bought a Brinkmann which was dreadful, one of these would have been perfect.
Thanks for the vids. It's good to see how he does it, it seems less filleting than just splitting the fish and cutting the backbone out, and trimming it all after its been smoked.
A few questions:
Do you hang the salmon sides in you smoker, and if so do you hang them through the ribs?
How do...
Hi Wade
Thanks for all the useful info. I think it's high time I learned to fillet fish. I'm sure there are lots of video tutorials on YouTube that will give me more of an idea about the techniques you describe.
Does anyone know how much waste there is on a whole salmon?
I have been thinking about cold smoking some, Makro last time I was in there was selling whole salmon at £6.99/kg and salmon sides at £12.99/kg.
Any idea which would be better value for money? Also I've never filleted a fish before...
