Ok boys we're at 165!!!! Right at exactly 4 hours!!! My temp dropped for a little while to about 205 so I probably could be a little ahead of where I am now without this damn wind. But I'll take it!
Ok spoke too soon... The reason my temps were shooting up to high is because my tuning plates got messed up! The baffle plate was angled out so all the heat was just dumping in! So as I tended to this emergency I figured why not act like a tourist!

Smokin my first brisket tomorrow morning! She's a baby I wanted to start out with a small flat because a) it's my first brisket and b) my first real smoke on my newly modified master forge charcoal grill turned smoker combo!
Ok boys! Running a practice smoke today to try out the plates and the charcoal basket I made up! No issue getting up to temp. She went right up to 275-280 in about 1/2 an hour! The delta t across the CC is down to about 15-18 degrees!
And once again I don't like to waste a good fire sooo----...
