Sounds like you got a good plan. I like doing the Mississippi Pot Roast that Malcolm Reed put out which is similar to what you are doing. If you are doing two you could do them with two different flavors

Since the OP is asking for simple I will go with Mustard but you didn't specify that it just had to be the regular yellow. Regular Yellow is fine, Dijon, Course Ground, Spicy Brown, Honey Mustard, Chinese Hot Mustard, Horseradish Mustard, etc.
