Thanks, for the feedback. I checked with A.C. Leggs today, on a recommendation for how much ECA to add. They recommended 3 ozs. for 25 lbs of meat. That seems like a lot. The Hunters Tangy Flavoring (ECA) that I got from Butcher Packer calls for 1.5 ozs. per 25lbs. which comes out to slightly...
I'm going to try my hand at summer sausage. I purchased the A. C. Leggs Summer Sausage Seasoning. It comes in an 18oz pkg to season 25lbs of meat. I only want to try 5 lbs at a time, so I'll weigh it out into 5 equal amounts. The procedure off of the A.C. Leggs website calls for 25lbs 70% lean...
And being most helpful you are! Certainly no offense taken by any means, Sen Se. (Hands folded reverently, head respectfully bowed)
I can see it now, Mister smart aleck here, gets his metal gears to replace the stupid plastic ones he should have avoided in the first place, disassembles his...
I don't know what to tell ya Mo. Maybe, if ya can get the stuffer on the cheap, purchase the LEM gears and see if they fit. If not send 'em back and get the plastic/nylon gears from the manufacturer of the stuffer. Then ya still have a bargain stuffer. I checked out the LEM stuffer and I don't...
Well, I guess I stand corrected then. I haven't seen the Grizzley. Boy, it sure looks the same. I was basing it on what the LEM rep told me. I looked at a LEM 5lber today, just out of curiosity and the gears sure looked like they would fit the Kitchener that I have. Maybe not the same...
I placed a couple of orders for premixed sausage spices, as well as a few different sizes of casings to use to start playing around with my new grinder and stuffer, as planned. Well, today in the meantime, I stopped by the local Scheels store and low and behold they carry a pretty good inventory...
Yes, the LEM 5lber does have metal gears. Lem also sells a set of metal gears for the 5lber for about $30, which will fit the Kitchener, Northern Tool and Grizzley 5lbers, because they are all the same model of grinder. The only difference is that the one sold by LEM already comes equipped with...
I puchesed the grinder & stuffer from Northern Tool & Equipment. Go to the webpage and click on "list all catagories" on the bottom right of the Home page. Click, then scroll down the list to Food Processing.
