I don't plan on having double grates in mine, I think this is where the collision you're talking about would occur with the gussets. They are shorter that the vertical distance of the door.
What tabs are you talking about to stop the grates from tipping?
Thank you

I WISH I had the patience to age my beef, but If you put a prime, black angus rib loin in the fridge at my house there is a 95% chance it's going to turn into a medium-rare prime rib....
Looks AWESOME.
....it's official, now I've seen it all being done on a smoker.
I thought guys were joking when I first saw posts about smoking salt.
Don't stop until you're smoking non-edible items. Looks great!
While I personally haven't catered towards any events, I know plenty of people that do, including a neighbor who runs a food truck and catering business. I help out whenever I can with both.
Most of the time he quotes per person. I would say that $30 a head is common. It depends what you...
-As someone who was born and raised on Wisconsin I can say you did a pretty good job here. If possible, try finding some mild brick next time-it turns out AWESOME-but it takes so very little smoke that it's almost comical-even less than other cheeses.
If you can find it Widmers Cheese in...
Franklin-all the way, but that's just me.
I think more guys cook on the RF's nowdays but I've always been used to the temperature gradient you get with a traditional stickburner-no tuning plates needed, only a baffle of some kind. Aaron has mentioned in his book that he's actually jammed an old...
Eye of round can get very expensive, yes. However, a little fat and connective tissue on a different cut of meat are not a big deal (but not too much either). Have a little more fat on the meat than you would like? Store your jerky in the freezer and keep it in the fridge when you want to eat...
Thanks for the reply. It sounds like you tack on braces to the entire inside diameter of the cook chamber-and the problem with that for me is that I had the cook chamber pipe rolled at a machine shop so it's not perfectly circular. I am also without a plasma cutter What I had in mind was...
Here's what I base my reasoning off of-
You're already spending a couple hundred bucks, spend a hundred more and get something that is built much better and not mass produced in a factory that inspects one out of every 400 units for quality control . Many people seem to think that stainless is...
I wouldn't count on it unless it came down in the middle of a bone dry field, but hey, grab a moisture meter and maybe you got a small head start with the drying process-you need never know. Good score nonetheless.
I would take your sticker stack and strap some industrial ratchet straps around it if that's the plan....either that or keep some cinder blocks on top of it. 1" of thickness per year of air drying remember.
If you want to have it cut into boards you're not going end up with a lot out of it. A commercial sawcutter probably wouldn't touch it, it would be best to find someone with a small woodmizer and ask him if he'd do it, and even so...from the photos I'm not sure if I'd attempt it.
You're going...
Smokin-it smokers. Electric. Stainless. Pretty darn affordable, MUCH better built than the MES....and I've owned both. If you want an electric, that's where I would be looking.
Personally, I would shy away from the Bluetooth and go with analog....to me it's just like a car-ultimately the more electronic features you have built into the the thing, the greater the chance that they fail eventually. I know for a fact that a lot of guys have issues with the bluetooth...
