    gloves to pull pork

I like the black food safe rubberized gloves at academy for line 11-12 bucks. I can almost say with certainty since I'm in the occupational therapy field you will need something that is MORE heat resistant with soft interior. I will be looking for you, in the mean time try those with some soft...

First Brisket... A bit dry & tough... What'd I do wrong?

Exactly right. Except its not my "opinion" it's a well known BBQ fact. The flat is basically a rip off. The supermarkets speed ate the flat and the point then trim most all the fat off the flat and put a sticker that says "best part of the brisket" yea it was! The sticker should say "formerly...

    Question about this Oak

Oak is an essential part of fire management. As it does burn hotter and faster than hardwoods. I can't emphasize enough that great BBQ starts with good fire management. That's where a Pitmaster is born not with rubs, sauces, injections etc. being able to pick up a log feeling how green it is and...

    What to buy?

forget the charcoal man...use all wood. Pork is so forgiving even to the novice smoker. If you get a small enough hog you can still use charcoal with a smaller smoker, however...it would have to be a small piggy. You can fabricate a cheap smoker using cinder blocks if you have those on hand (old...

    New Smoker

however I have seen them as low as 500. The problem is, you may have to replace the floor, the tires, buy a spare rim and tire, add any extras you need, replace welds, or fix pinholes/rusted out spots, replace wheel bearings, etc you may be better off spending more on a nicer one up...

    New Smoker

let me guess manual racks that do not slide, needs a new floor, probably new tires, assuming its not rusted out...and the trailer is in tow (it does not wobble being pulled down the road those go for 750 all day long here in texas.

First Brisket... A bit dry & tough... What'd I do wrong?

Buy an actual brisket. Full packer, don't buy the flats until you hey good with regular. Flats have a tendency to dry out.
