    I hear exactly what you're saying. I'm a huge fan of the bark on my pork and beef and with a half cup of sugar and a half cup of paprika it really doesn't taste like beef or pork.

    -9? Ouch. Not quite that cold here in South Dakota today but we're supposed to get the freezing rain / 6" of snow tonight. Yeehaw. Ribs are going on regardless tomorrow. Takes twice as much charcoal but worth it.

    I built my UDS about a year ago and am very happy with it. You will want to burn it out both for paint and chemical removal. I used 2x4 scraps from work. They burn hot and fast. I started with 1 ball valve and one called pipe and was not getting enough air flow so I drilled in 2 more cap/pipes...

    Thank you for the welcomes. Doesn't look like the smoker is coming out today - gusts to 65mph. I'd have to anchor the ol UDS to the driveway.

    Been following the site for a while & needed to sign up to join in the conversations. I have been smoking for about a year and I am totally addicted. Started by making my own smokenator for my Weber 22. Worked great for a while then I needed more. Built a UDS next. Love the flavor from it...
