    70 degrees where you and cowgirl hang on the cold smoke. That's the safe zone ! I'll try the procedure you just posted with some Buckboard soon!

    let us know how you like it!  I bought the one from vacMaster. Awesome unit so far. Best steak I have ever eaten.... from a sirloin!  I can imagine what a fillet will taste like!  I sous vide my pastrami, corn, bacon so on and so on. it makes a big difference !

    I chose the Pit Boss fan. My Offset is a vertical OKJ Bandero. It seems to be a good fit. anything smaller would not be enough I feel.
