    MES 40 - 20070311

I have one as well, picked it up a little over a month ago.  I love it.  There are some temperature issues that can drive you a little nuts, but use a little deflector on the bottom rack, and I think you'll be good to go.  I've had tremendous success with mine, and I'm a noob!

Major MES40 Gen 1 mods.......count them racks baby!

Wow, you guys amaze me!  I still need to tweak my MES 40 more.  Right now, I just lay down some aluminum foil on the bottom shelf toward the back right.  :-) I have pretty much zero tool skills, so I'd probably cut off a limb doing what you did here.  It looks great!

    Belated Merry Christmas!!

Lots of family together yesterday, and the day flew by.  I did smoke a ham, and my wife baked pecan and pumpkin pies.  It was a nice day. I hope you all had a wonderful day, and will have a great weekend!

    MES with Window (heads up)

Bear, this makes so much sense, and I'd encourage anyone who has a smoker with a window to be mindful of it.  I have a friend who has the same unit I do, but he doesn't have any thermometers to measure the real temps, so he wouldn't even know it was happening.  I just told him to be sure the sun...

First time buying an eletric smoker

I agree!  A coworker is getting one, and I'm getting one for Christmas.  Sounds like an awesome addition, and less than $40!

How to season the electric smoker for first time?

Hi, Pam, I have the 20070311, and the seasoning directions were small, but basically were this - set the smoker to 275 and set the time for 3 hours, but don't add any wood yet.  Add wood chips for the last 45 minutes to hour.  And that's it! Good luck and enjoy!

    MES newbie

Bear has a great post here about temperature swings.  There are a few factors.  If you have a Gen 1 smoker (I do), then the heating element and the top vent are both on the right, so the right side tends to heat up more than the left.  Over time, the temperature will stabilize (it does this in...

noob trying to grasp all this!

Oh, shoot, guys!  Last night, we were wanting to test the smoker out and cook for the upcoming week, but I didn't think to take pictures!  I do have photos of the Thanksgiving birds. Here are the results from last night. 1) First, we used a rubs recipe from online, and decided we don't like...

noob trying to grasp all this!

Man, I can't wait to smoke ribs!  Tonight I'm smoking a chicken and a pork loin.  I put on a pretty spicy rub, "Steve's Basic BBQ Rub" so I'll be interested in seeing how that comes out. I'm going to have to smoke some chicken wings here soon!

Preheating new 40" MES. Low temp questions??

You know, there's this other test I ran, and I don't understand it either.  I put five thick steaks on the top two shelves.  Before I put the steaks on, temperatures matched (vent may have been closed to help it heat up faster).  After I put the steaks on, I could repeat these results multiple...

Preheating new 40" MES. Low temp questions??

I completely agree, Bear, that gives you some head room. Interestingly, I had emailed Masterbuilt Friday and then called them during lunch today.  BTW, if I may, I'd like to put in a plug for their company - what nice and professional people!  Over the phone, the lady said, "Well, we can send...

Preheating new 40" MES. Low temp questions??

I apologize for hijacking this thread, Blathnac, and I hope that some of the advice in here will help you.  I love my MES 40, so if I were you, I'd follow the suggestions here.  First, I agree - use professional thermometers that you validate (I used both the ice slush and boiling water to...
