Your assumption about the alternating display is correct...have no idea why the displayed temp would rise to 200*....Even though it was a clearance smoker from cabelas I would not mess with it....go directly to Masterbuilt and let them replace the entire smoker

there are a lot of satellite Corky's in and around Memphis......The ONLY one you want is the original place which is on Poplar Avenue on the east side......It is also west of Collierville, TN which is a burb of Memphis........the original Corky's is a fun place

Do not think a smoke ring has taste.......There is a thread about using cheap charcoal (the manufactured stuff) that will impart a smoke ring on the meat.......please read that....suggest you keep it as I know you will like the MES

I would not go the feed tube route.......Still need to manipulate the pieces at times.....sometimes need to poke down ashes through the grating which are the heaters.....This thing still requires attention but operates independent of the internal heater.......and you don't need to guess about...
Dave...Yes it does produce a little extra btu's....Since my MES 's are both used inside my shed I don't have the problem you are experiencing with wattage....The wood burn is smoothed out and it seems to me that is because of a limited amount of oxygen to support the charcoal and wood...
The only difference yesterday was the addition of the lump....Always use water in the pan with briskets.........Always turn out good.......Not a big deal to me if there is a smoke ring...Thought it would be nice to try......Just wondering why it did not work for me
Well yesterday I tried it
Had 4 brisket flats in the MES 40....Used cowboy lump not briquets....Added twice the volume of lump to wood each time more was needed....That was every 15-30 minutes....Stopped adding when internal of meat was at 150*....Continued until internals reached 190*

Reading the quoted sites, it appeared to me, that the subject was about polluting the atmosphere with wood burning as the heating source for a home. Did not read a warning about smoking or BBQ'n on either of the sites...
The latest 40" MES comes with a very nice cover included......they are currently $299 at Sam's....thanks again MossyMo for the heads up.....
If I only were to have one it would be the 40" but the 30" is a very spirited little smoker and superior for some of your smoking endeavers.....

From time to time someone will comment on the MES running too hot....then you never hear more about it......It seems to not be a problem that lasts long but you can adjust down if you like.....Did you have meat in the smoker when you took these readings?....that would probably affect...

The two heaters in my "contraption" are series wired and I have not had a problem.......although not trying to generate as much btu as you are
