Ive threaded these before, but thought I'd share this again because ive done this a few time since and have yet to have a bad experience
I love doing turkey thighs because they usually come out very juicy and flavorful, not to mention a more healthy alternative to many of the delicious posts...
My smoker came with an expected smoking time guideline pamphlet. After a few weeks of believing it I filed it in the "important bin".
Heres what ive found..
Full chickens 2-3 hours
Pieces of chicken 1-2 hours
ribs 6 hours
Pulled butt/brisket 1.5 hours per pound. Really, they have a mind of...
With chicken I toss about 3-4 chunks of hickory or apple at the beginning and thats it. I dont use chips, so I dont know how to compare. But what jay said, and hour of smoke for chickens is just fine.
anything more it tastes like an ashtray.

Here's my chicken from last night
I bought the napoleon 3 in 1 smoker a year ago. Its works as good as the day I bought it. The 1 year warranty is up now but it doesnt bother me. I have yet to come across a piece of meat that didnt fit in it. As far as long smokes go, I dont live in an ideal climate to support long charcoal...
I hit it with smoke for 40 minutes
then I hit it right close to the coals to finish
mediumish because my wife doesnt like blood very much
cant wait to do it again
