I'm planning on doing a turkey breast tomorrow! I've been doing buttermilk brines for all things chicken lately. Since I've started doing this brine, I've made some of the best chicken I've ever had
1L buttermilk
1/4c salt
1/4c brown sugar
Green onion
Garlic
...other random things

Most times i'll fill the charcoal basket. Place 3-4 fire starters unthe the basket. 20-30 minutes later, you're good for hours and hours!
Since I switched to charcoal. I cant see myself going back.

with the water pan I cant get the temp over 230-240 ish
So now I take the bottom grill, wrap it in tinfoil. Break holes in it untill the temp gets to where I want lol

Rinsed and dried
now its time for rub
1/3 cup of brown sugar
Palm full of rosemary
palm full of paprika
palm full of minced onion
small palm full of garlic powder
..no salt..
Smoking starts in about 4-5 hours;)
