    the flat was small and trimmed more than I wanted  I think it was about 2.5 to 3 lbs ....  it smoked right at about 4 hours .. to an IT of 195 ...I took it out wrapped it in tinfoil and a dish cloth and let it sit in a un-lit oven for 2 hours ...It was really good   the night before I made some...

    Has anyone tried Snake River Farms meats

    They are suspose to be the best around ...but they are pretty high dollar too ...I think the shipping would be a deal breaker too ...There is a place in Naples FL I love called JimmyP's  They sell all grades of Kobe Beef ... I dont mind buying some of the lower grades when Im there  but no way...

    man they looked great ...Next week I'm going to make some polish sausage ... I got a butt in the freezer I bought when they were on sale ... Thanks for your post ...   Do you tie all your sausage or do you ever twist it ? I think I can smell that  Andouille all the way here in NC
