Will the pellicle still form if I add maple syrup to my cured bacon?

Just cured some pork bellies for a week.  Test fried, way too salty, soaking for an hour and a half, then will test fry again.  Once I get the salt right, I will get them into the fridge for 2 days to form the pellicle.  In the past I have only used some dry rubs when I put it in the fridge to...

Country Cured Ham - From Go to Show: Q/View

MULE'S CURED, SMOKED BACON IN MY DELUXE UDS WITH AMNPS. WITH Q-VEIW

OK, I am slow today.  Just looked at your pics again  and I can clearly see the knife!  Is that just a normal meat slicing knife?  Is it really thin?  I think that is where my chef's knife didn't help, in that it gets significantly thicker near the top.

Local home made maple syrup bacon! cure question

HAHA no sh*t! All i did was confuse the crap out of myself here, but I think I am good now with the knowledge that came into this thread.  I did not buy TQ when I got the morton's as I do not think they had any available at that time.  For me, from now on and forever, I will try using Pop's...

Local home made maple syrup bacon! cure question

argh, this whole nitrate/nitrite thing has me confused. I want to reiterate that the Smoke Flavored Sugar Cure as Martin said contains ONLY the Nitrate.  http://morton.elsstore.com/view/product/?id=21226&cid=178 Regular Sugar Cure has both nitrate and nitrite. Thanks for continuing with the...
