    1st Brisket Tomorrow

I couldn't add anything to this, because mballi did a great job in giving you a crash course. The stall, when it happens, is a great opportunity to get a few more beers. And your gonna need them. The stall is one of the most frustrating parts i have ever encountered. But for some reason, a few...

Another Tri Tip that i am PROUD to show even if i cut it wrong.

I was hungry again.. for more Tri. This time, I decided to marinate it overnight in a Tiger sauce rub with a little bit of Spaten beer. Pulled it out of the fridge after 15 hours and lightly patted it dry, and rubbed it with my usual concoction. Threw it on the smoker at 230 for about 4 hours in...

Ive made a few of those, and i love em!! I used Franks as well. Plus Blue cheese dressing and celery in the mixture. Put it all in a fatty piston and walla!! I have found through trial and error, that it is better to put in less franks when you make it, then drizzle it on top of a slice...

BBQ Pitmaster show on TLC tonight

Could be good or bad... undoubtedly, this will start a new influx of want to learn and wanna be smokers. And yes there is a difference in my opinion. It will definitely up the number of entrances into the local competitive scene, which is good or bad, depending on your outlook.
