    chargriller seal modification

Alelover, Any pictures on how you gasket the backside (underneath the lid)? Is it the same way as the front and 2 sides? I can't imagine it would be. Also, did you find it best to mount the angle iron channels and gaskets with the lid mounted or taken off?

This is my version of the perfect Char Griller with side fire box

Sdh600, I'm trying to build the same angle iron all around the bottom chamber edge of mine just like yours in picture 8. Did u use half inch angle? Since it's an L shaped piece, how do you mount it to the cooker? The way yours look make it seems like a U channel piece. Did you weld it on...

    Hello from Sugar Land

I also added a second level grate inside the firebox so I can sear steaks right above the burning logs while not impacting the big meats cooking inside the main compartment.

    Hello from Sugar Land

It holds temps just fine. I love the efficiency even though its a stick burner because of the firebox underneath instead of an offset. As a smoker, I love it. As a grill, I find that using the charcoal pans inside the main compartment I need to keep the lid open, otherwise the fire goes out. So...

    Smoked some trouts this weekend

Brined with kosher salt, sugar, water for 2 hours, then straight on to smoker. When they' raw the were so fishy they almost got me in trouble as my wife wondered why the house smelled like old poont**g when she walked in. After brining, I hung by their jaws. Convenient, but next time...

Made some chicken and sausage gumboeauxxxxx ...

I think everyone should try making that roux. The taste is unbeatable, and as long as you don't stop whisking in high heat, it's really foolproof. I've done it 3 times now without fail. It's really easier than grandma made it to be :)

Made some chicken and sausage gumboeauxxxxx ...

I decided to make some chicken and sausage gumbo, and to give credit where credit is due, I found Saiko's gumbo thread here: http://www.bbq-brethren.com/forum/showthread.php?t=61129&highlight=Gumbo+recipe First, I decided to smoke my chickens and andouille sausages Then I deboned the...

Experminted at a BBQ joint today

I certainly have experienced what you guys had in other states, but I have to say, John Mueller and Aaron Franklin's in Austin, TX... I still have yet to be able to beat. They are the real deal IMHO. The biggest disgrace was Dallas BBQ in NYC. I was skeptical, but our friends that lived there...

    Best BBQ place downtown Houston?

Actually, when r u heading down and free to hit the town for food or que experience? If I don't have a gig that day, I don't mind picking u up and helping out a brother in smoke. Assuming that you are a brother right? Don't wanna get in trouble with the missus.

    Best BBQ place downtown Houston?

I have to say, downtown Houston has no really good bbq.(unless you live in Anchorage in which your definition of good bbq maybe on a different scale (flame suit on). Without going to Austin, Lockhart, Taylor, Lexington, I would say, go to Central Texas bbq in Pearland (30 min without traffic)...

    Hello from Sugar Land

It sure is heavenly, cause it's basically the spinalis cap of a ribeye with the flavor of the bone. The best cut on the beef.

    Hello from Sugar Land

S2K9K: I talked to the meat dept guy from HEB during a weekday morning when he's not busy, and he found these meaty chuck short ribs still in Cryovac. I got 4 racks (4 bones to each rack, so they're not as long as pork spares cut). I kept the other three in freezer for another day since this is...

    Hello from Sugar Land

Hi Al, Yes, the firebox is underneath the main chamber. I like it because it's much more efficient than traditional offsets due to no loss of radiant heat from top and sides of firebox, and even left to right temperature. It also has 2 charcoal grate boxes inside main chamber that I can use to...

what to do with old water?

I combine with old and cold ash into trash bag. Make it a solid waste. That's what my city instructs on their site (actually they said to mix with cat litter) but I don't have cats.
